CUL ART 8 European Pastry Production Units: 4 Prerequisites: CUL ART 7 Baking with a grade of “C” or better. Advisories: CUL ART 3 with a grade of “C” or better or ServSafe Managers Certificate. This course is designed to enable the student to prepare European style pastries including cheesecakes, individual cakes, tortes and tarts. The student develops skills in the production of fine pastry such as tea cookies, petit fours, and individually plated desserts. Specialty breads are produced. (CSU)
