CUL ART 19 Kitchen Management Units: 9 Prerequisites: CUL ART 9 Restaurant Operations with a grade of “C” or better. This course is designed to examine advanced principles of preparation of foods served in hotels, country clubs, catering operations and restaurants. The student gains experience in quantity food preparation while working in the Student Chef campus restaurant as well as on and off site catering. Career options are explored. (HBCU, CSU)
